What an easy way to make delicious use of cucumbers! You could also try it with green beans, peppers, or other veggies.
1 cucumber, sliced
3 springs dill
2/3 cup water
1/3 cup white distilled vinegar
2 tsp kosher salt
3/4 tsp sugar
1 tsp pickling spice
1 12-oz mason canning jar
Wash canning jar in dishwasher on hot cycle and allow to dry.
Wash and slice cucumber.
Pack cucumber slices and dill springs into jar and sprinkle in pickling spices.
Heat water, vinegar, salt, and sugar to boiling. Remove from heat and pour over cucumber slices in jar.
Place lid on top, and screw on tightly. Shake.
Allow to cool for 1/2 hour and place in refrigerator for up to 1 month.
These are tasty after a few days, but the longer they are in the refrigerator, the more flavor they will have.
Note: You must refrigerate after making product!
